Ingredients
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey
- 1/4 teaspoon kosher salt
- black pepper, to taste
- 1 (5-ounce) bag baby spinach
- apple, to taste, chopped or sliced
- feta, to taste, crumbled
- walnuts, to taste, optionally toasted or candied
Directions
Step 1 –In a large bowl, add the olive oil, the apple cider vinegar, the Dijon mustard, the honey, the salt, and the black pepper and whisk to combine.
Step 2 –Add the spinach, the apple, the feta, and the walnuts to the same bowl and toss until everything is coated well.
