Ingredients

For the meatballs:

  • 2 pounds ground chicken
  • 1 1/2 cups panko breadcrumbs
  • 2 eggs
  • 1/4 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon parsley, chopped
  • salt, to taste
  • pepper, to taste

For the sauce:

  • 1/2 cup buffalo sauce
  • 1/2 cup light brown sugar
  • 2 tablespoons soy sauce

For topping:

  • parsley, optional, chopped
  • crushed red pepper flakes, optional

Directions

Step 1 –Preheat the broiler on high.

Step 2 –Line a baking sheet with foil.

Step 3 –In a large bowl, combine the chicken, breadcrumbs, eggs, onion, garlic, and parsley.

Step 4 –Season with salt and pepper.

Step 5 –Roll the chicken mixture into 1-inch meatballs and place them on the prepared baking sheet.

Step 6 –Spray the meatballs with nonstick cooking spray.

Step 7 –Broil the meatballs until browned, about 6 minutes on each side, flipping halfway through.

Step 8 –Place the browned meatballs into a slow cooker.

Step 9 –Add the buffalo sauce, brown sugar, and soy sauce.

Step 10 –Cover and cook on low for 2 hours.

Step 11 –Serve hot with parsley and red pepper flakes.
