Friday’s Frittata

Fridays are special for a lot of reasons, but we are adding a new reason to the list! Friday’s Frittata is a wonderful way for the entire family to end a busy week. Start the weekend fanfare with this fluffy egg, mixed vegetable, savory bacon, tender potato, and melted cheddar cheese masterpiece. It just doesn’t get any more invigorating than this! Everyone will rejoice in Friday’s Frittata, and maybe they’ll even secretly hope that their Saturday could be just as lucky. Everyone has a favorite day of the week, and we think this just might seal the deal for a fantastic Friday filled with breakfast-loving (or dinner-loving) fun! Cheers to the weekend, friends!

Ingredients

  • 8 eggs
  • 1/4 cup light cream
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup mixed vegetables, of your choice, such as bell peppers, mushrooms, spinach
  • 1 1/2 cups potatoes or hash browns, cooked
  • 8 slices bacon, cooked and chopped, can substitute 1/2 cup ham, diced
  • 2 green onions, sliced
  • 1/2 cup cheddar cheese, shredded
  • 1 tablespoon fresh parsley, optional, chopped

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –In a medium bowl, add the eggs, the light cream, the dry mustard, the salt, and the black pepper and whisk to combine.

Step 3 –In an 8-inch oven-safe skillet or cast-iron skillet over medium heat, heat the olive oil.

Step 4 –Add the mixed vegetables to the olive oil and cook until crisp-tender, about 3-4 minutes.

Step 5 –Add the potatoes to the vegetables, stirring to combine, and cook, about 5 minutes.

Step 6 –Sprinkle the cooked bacon and the green onions on top of the potato-vegetable mixture.

Step 7 –Pour the egg mixture over the top of the bacon-vegetable mixture.

Step 8 –Evenly sprinkle the cheddar cheese and the parsley on top of the egg mixture.

Step 9 –Bake the frittata until the eggs are set, about 14-16 minutes.

Step 10 –Set the oven to broil and broil the frittata, about 1-2 minutes.

Step 11 –Let the frittata cool, about 5 minutes.

Step 12 –Slice and serve.
