Galentine’s Strawberry Tart

Galentine’s Day, a recently created holiday celebrated the day before Valentine’s Day, is a day for women to celebrate their relationships with their fellow ladies—it’s for the gals, as the name suggests! Bringing a Galentine’s Strawberry Tart to any celebration of friendship is a sure sign of how much you care. Buttery pastry crust, a sweet and luscious custard filling, fresh strawberries glazed with strawberry jam… it’s a burst of vibrant affection for those who mean so much to you! Galentine’s Strawberry Tart will make all the gal pals glad!

Ingredients

  • 1/2 cup seedless strawberry jelly
  • 1 sweet pastry tart case, store-bought
  • 2 cups luxury custard
  • 20-25 medium strawberries, stemmed and sliced in half
  • fresh mint, optional, for garnish

Directions

Step 1 –Heat the strawberry jam up in a pan or in the microwave to ensure it’s loosened and spreadable, for about 30 seconds in the microwave. You can also add a little boiling water to help loosen the jam.

Step 2 –Place the tart case on a serving plate.

Step 3 –Spoon the custard into the tart case in a smooth even layer, about 1/2-inch from the top of the pastry.

Step 4 –Place a strawberry half in the center of the tart and, working outward, arrange the strawberries in concentric circles, with the pointed part of the strawberry pointing to the center.

Step 5 –Brush the warm jelly generously all over the top of the tart.

Step 6 –Let the tart set for 5 minutes.

Step 7 –Decorate the tart with the mint leaves and serve.
