Game-On Fajitas

Time to get the game on! And to have some of these Game-On Fajitas! This is the tenderest, slow-cooked chicken around! It’s braised in Tex-Mex flavors, so it’s zesty and spicy and so, so savory. In other words, it’s perfect for piling on tortillas with cheese and sour cream, or for pairing with some salsa for vibrancy! Game-On Fajitas will be the quarterback of the flavor team for your next get together!

Ingredients

For the fajitas:

  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon brown sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup low-sodium chicken broth
  • 3 chicken breasts, boneless and skinless
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 1 cup jarred salsa

Optional, for serving:

  • jarred salsa, to taste
  • sour cream, to taste
  • cheese, to taste, shredded
  • tortillas, to taste, warm
  • fresh cilantro leaves, to taste

Directions

Step 1 –In a small bowl, add the chili powder, the salt, the brown sugar, the garlic powder, the cumin, and the cayenne pepper and whisk to combine.

Step 2 –In a 2 1/2-4-quart slow cooker, add the chicken broth and the chicken breasts in a single layer.

Step 3 –Sprinkle the chicken with 1/2 of the seasoning mixture.

Step 4 –Top the chicken layer with the red bell pepper, the green bell pepper, the yellow bell pepper, and the onion.

Step 5 –Sprinkle the remaining seasoning mixture on top of the pepper-onion layer.

Step 6 –Add 1 cup of the salsa and spread it into a thin layer over top of the pepper-onion layer.

Step 7 –Cover and cook until the chicken reaches an internal temperature of 165 degrees F, about 3-4 hours on low heat or 2 hours on high heat.

Step 8 –Transfer the chicken breasts to a cutting board and slice each into thin strips.

Step 9 –Serve the chicken and the veggies with the extra salsa, the sour cream, the cheese, the warm tortillas, and the cilantro leaves.
