Garlic Cheesy Potato Bake

Tight on time but looking for comfort food? Garlic Cheesy Potato Bake is the answer to your I-don’t-have-time-to-watch-over-the-oven kind of side dish. All you’ll do is add the potatoes and the cheesy, seasoned sauce to a leave-it-alone slow cooker for a few hours… and before you know it, you’ll have a tasty, cheesy, comforting side dish that goes well with several of the main meats you love. Garlic Cheesy Potato Bake will be a welcoming gift at the end of a long workday or a busy weekend evening. There’s truly nothing better than a good potato dish!

Ingredients

  • 1/2 cup 2% milk
  • 1 (10.75-ounce) can condensed cheddar cheese soup, undiluted
  • 1 (8-ounce) package cream cheese, cubed
  • 1 clove garlic, minced
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon black pepper
  • 2 pounds potatoes, peeled and sliced
  • 1 small onion, chopped
  • paprika, optional, to taste, for topping
  • fresh herbs, such as curly leaf parsley, optional, to taste, for garnish

Directions

Step 1 –In a large saucepan over medium heat, heat the milk until bubbles form around the sides.

Step 2 –Transfer the saucepan from the heat.

Step 3 –Add the cheddar cheese soup, the cream cheese, the garlic, the nutmeg, and the pepper to the milk and stir until smooth.

Step 4 –Place the potatoes and the onions in a 3-quart slow cooker.

Step 5 –Pour the milk mixture over the potato mixture and mix well.

Step 6 –Cover the slow cooker and cook on low heat until the potatoes are tender, about 6-7 hours.

Step 7 –Serve the potatoes sprinkled with the paprika and garnished with the fresh herbs.
