Garlic Smashed Potatoes

Oh, but this is the good stuff! No one will miss the fries when these Garlic Smashed Potatoes are on the table. Crispy, fluffy-on-the-inside, coated in fragrant garlic flavors… you don’t even need ketchup because they are just that good. Serve Garlic Smashed Potatoes with steak, chicken, or just gobble them up as a snack. The possibilities are endless!

Ingredients

  • water, for steaming the potatoes
  • 1 pound baby potatoes, halved
  • 2 tablespoons extra-virgin olive oil, divided
  • 3 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Place a large, rimmed baking sheet in the oven to preheat.

Step 3 –Bring 1 inch of water to a boil in a large saucepan fitted with a steamer basket.

Step 4 –Add the potatoes to the steamer basket, then cover and steam until just tender, about 12-14 minutes.

Step 5 –Combine 1 1/2 tablespoons of the oil, the garlic, the rosemary, the salt, and the pepper in a small bowl.

Step 6 –Brush the hot baking sheet with the remaining oil.

Step 7 –Place the steamed potatoes on the hot sheet, skin-side up, and smash them with the bottom of a jar or the smooth side of a meat mallet.

Step 8 –Drizzle the potatoes with the garlic oil.

Step 9 –Roast the potatoes until browned on the bottom, about 15 minutes.

Step 10 –Serve hot.
