Cauliflower has gotten quite the PR makeover in the last few years. In the past, it was mostly bland and served steamed alongside more delicious items. These days, the veggie is made into rice, pizza crust, and steak. Cheesy Cauliflower Casserole is yet another innovative and delicious interpretation. The mild flavor of the cauliflower lets the rich cheese and butter take center stage. Cheesy Cauliflower Casserole makes a competitive companion to mashed potatoes alongside a holiday spread, but also with a protein for a balanced dinner.
Ingredients
- 1 large head cauliflower, cut into florets
- 1 cup frozen corn
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 cup milk
- 1 1/2 cups cheddar cheese, shredded, divided
- salt, to taste
- pepper, to taste
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Bring a large pot of water to a boil.
Step 3 -Add the cauliflower to the water and boil it until softened, about 5 minutes.
Step 4 -When there is 1 minute of cooking left for the cauliflower, add the frozen corn.
Step 5 -Drain the vegetables and set them aside.
Step 6 -In a medium-sized saucepan, add the butter over medium-high heat.
Step 7 -Add the flour, stirring until a completely smooth paste forms.
Step 8 -Add the milk and 1/2 cup of the cheese and continue stirring until the cheese is melted and the sauce thickens.
Step 9 -Add the cauliflower and corn to a medium-sized casserole dish.
Step 10 -Pour the cheese sauce over the vegetables, mixing it so the cheese covers everything.
Step 11 -Sprinkle it with the salt and the pepper.
Step 12 -Top with the remaining cheddar cheese.
Step 13 -Place the casserole in the oven and bake for 30 minutes.
Step 14 -After 30 minutes, turn the oven to broil and bake, watching it carefully, until the cheese is lightly browned, about 2-3 minutes.
Step 15 -Serve hot!
