Ingredients

  • 2 pounds sweet potatoes, peeled and cut into 1-inch-thick cubes
  • 2 tablespoons brown sugar
  • 1 tablespoon olive oil
  • 1 tablespoon butter, softened
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Line a baking sheet with parchment paper.

Step 3 –In a large bowl, add the sweet potatoes, the brown sugar, the oil, the butter, the cinnamon, the ginger, and the salt together.

Step 4 –Place the sweet potato mixture on the prepared baking sheet and bake, stirring after 20 minutes, until they are tender, about 35-40 minutes.

Step 5 –Serve.
