Ingredients
- 1 tablespoon unsalted butter
- 2 pounds white or sweet potatoes, peeled and cut into 3/4-inch cubes
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon fresh thyme, chopped
- salt, to taste
- ground black pepper, to taste
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Place the butter on a sheet pan and melt in the oven as it preheats, about 2 minutes.
Step 3 –Transfer the baking sheet from the oven.
Step 4 –In a bowl, toss the potatoes with the olive oil and the thyme.
