Grandma’s Butterscotch Pie

Grandma knows she doesn’t have to pull out all the stops when it comes to dessert… she just doesn’t need to! With her classic Grandma’s Butterscotch Pie, she only needs one stop on the sweetness express. The filling is a creamy, luscious butterscotch pudding, sweet, buttery, and rich, with notes of that smoky brown sugar goodness. A flaky pie crust on the bottom only adds to the buttery beauty. Grandma’s Butterscotch Pie is all you need for a homespun and happy treat!

Ingredients

  • 2 cups milk
  • 1 cup light brown sugar, packed
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 2 large egg yolks, beaten
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 (9-inch) pie crust, baked according to the package directions

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –In the top of a double boiler over simmering water, add the milk, the brown sugar, the cornstarch, and the salt and cook, while stirring constantly, until the mixture starts to thicken, about 20 minutes.

Step 3 –Add the egg yolks to the milk mixture, while whisking, and continue to cook and stir until the mixture is thick.

Step 4 –Transfer the filling mixture from the heat.

Step 5 –Add the butter and the vanilla to the filling mixture and stir to combine.

Step 6 –Pour the filling mixture into the baked crust.

Step 7 –Bake the pie in the preheated oven until the top begins to brown, about 5 minutes.

Step 8 –Serve.
