Grandma’s Chicken Meatloaf

Grandma likes to do her own thing. She marches to the beat of her own drummer, as the expression goes. While everyone else makes meatloaf with beef, she has other ideas. Grandma’s Chicken Meatloaf shows that buckling trends can result in some delicious results. This meatloaf packs together juicy, tender chicken and smokey barbeque sauce before being wrapped in succulent, salty prosciutto. Brushed with a sweet and tangy glaze on top, Grandma’s Chicken Meatloaf will make you want to explore what’s possible in the kitchen… Right after you finish eating it, of course!

Ingredients

  • 8 thin slices prosciutto
  • 2 cups ground chicken, plus more as needed
  • 1/2 small yellow onion, finely chopped
  • 1/2 small red bell pepper, finely chopped
  • 1 egg, lightly beaten
  • 2/3 cup fresh breadcrumbs
  • 2 tablespoons fresh chives, finely chopped
  • 1/3 cup barbeque sauce, divided
  • salt, to taste
  • pepper, to taste
  • 2 tablespoons tomato sauce
  • 1 tablespoon brown sugar
  • potatoes, optional, cooked as you prefer, to taste
  • green beans, optional, for serving

Directions

Step 1 –Preheat the oven to 390 degrees F.

Step 2 –Grease a 4×8-inch loaf pan.

Step 3 –Line the base and the sides of the loaf pan with the prosciutto, allowing for some overlap.

Step 4 –Combine the chicken, the onion, the bell pepper, the egg, the breadcrumbs, the chives, and 2 tablespoons of the barbeque sauce in a bowl.

Step 5 –Season the mixture with the salt and the pepper.

Step 6 –Press the meatloaf mixture into the prepared pan.

Step 7 –Cover the loaf pan with foil and bake for 25 minutes.

Step 8 –Combine the tomato sauce, the brown sugar, and the remaining barbeque sauce in a small bowl.

Step 9 –Brush the meatloaf with the sauce mixture.

Step 10 –Bake until the sauce caramelizes and the meatloaf is cooked to 165 degrees F, about 15-20 minutes.

Step 11 –Let stand for 5 minutes.

Step 12 –Slice the meatloaf and serve with the potatoes and the green beans.
