  • 1/4 cup unsalted butter, softened
  • 1 tablespoon freshly ground black pepper
  • 1 teaspoon Herbes de Provence
  • kosher salt, to taste

Directions

Step 1 –Let the roast rest until it reaches room temperature, about 2-4 hours.

Step 2 –Preheat the oven to 500 degrees F.

Step 3 –In a medium bowl, add the butter, the black pepper, and the Herbes de Provence and mix until blended.

Step 4 –Evenly spread the butter mixture over the entire roast.

Step 5 –Generously sprinkle the salt over the roast.

Step 6 –Bake the roast, uncovered, for 20 minutes.

Step 7 –Turn the oven off, leave the oven door closed, and let the roast sit, about 2 hours.

Step 8 –Slice the roast and serve.
