Party Time Nacho Casserole

Woo! It’s party time! Grab the streamers and balloons, or at the very least the party hats! Break out the fun appetizers! And to make sure the good times roll right on into dinner, whip up Party Time Nacho Casserole! Layers of crunchy tortilla chips, juicy chicken, and melty, sharp feta mingle with spicy salsa verde and plenty of Tex-Mex flavors! It’s like an appetizer that is an apprentice no longer and is a full-fledged meal! Party Time Nacho Casserole might just start a party when you try it… at the very least, your tastebuds will be having a party!

Ingredients

  • 3 cups rotisserie chicken breast, shredded
  • 2 large tomatoes, chopped
  • 1 cup carrots, shredded
  • 1 cup corn kernels
  • 1/2 cup salsa verde
  • 2 cloves garlic, crushed
  • 1 teaspoon chili powder
  • 3 ounces tortilla chips
  • 1/2 cup feta cheese, crumbled
  • cilantro, optional, to taste
  • hot sauce, optional, to taste

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Spray a 2-quart baking dish with nonstick spray.

Step 3 –In a large bowl, combine the chicken, the tomatoes, the carrots, the corn, the salsa verde, the garlic, and the chili powder.

Step 4 –In the prepared baking dish, arrange 1/3 of the chips.

Step 5 –Top the chips layer with 1/2 of the chicken mixture and then 1/2 of the feta.

Step 6 –Repeat the layers.

Step 7 –Arrange the remaining chips on top of the casserole.

Step 8 –Bake until hot, about 20 minutes.

Step 9 –Top with the cilantro and serve with the hot pepper sauce.
