Green Envy Bake

This Green Envy Bake really does spark envy in those who find out you made it… because they want some themselves! The top might be golden-brown because of all that melted, sharp cheddar cheese, but under the surface is an emerald, savory goodness of savory scallions, fresh spinach, and bright green peppers. Rice makes it hearty and filling, while ricotta adds tang and creaminess. Happy feelings follow each bite of Green Envy Bake!

Ingredients

  • 2 1/2 cups basmati or long grain rice, cooked
  • 2 cups sharp cheddar cheese, shredded, divided
  • 1 cup ricotta cheese
  • 1 cup sour cream
  • 2 cloves garlic, minced or finely chopped
  • salt, to taste
  • pepper, to taste
  • 10 ounces frozen chopped spinach, thawed and drained
  • 1 medium green bell pepper, chopped
  • 4 scallions, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 2-quart casserole dish or cast-iron pan.

Step 3 –In a large mixing bowl, combine the cooked rice, 3/4 of the cheddar cheese, the ricotta, the sour cream, and the garlic.

Step 4 –Season the rice mixture with the salt and the pepper and mix until well-blended.

Step 5 –Add the spinach, the bell pepper, and the scallions and mix until well-blended.

Step 6 –Pour the mixture into the prepared casserole dish.

Step 7 –Sprinkle the remaining cheddar cheese evenly on top of the bake.

Step 8 –Bake until golden, about 30 minutes.

Step 9 –Allow the casserole to rest for 5 minutes.

Step 10 –Serve.
