Ingredients

  • 4 thick-cut slices bacon, coarsely chopped
  • 1 cup sweet onion, minced
  • 10 baby bell peppers, assorted colors, thinly sliced
  • 2 cloves garlic, minced
  • 2 (12-ounce) cans evaporated milk
  • 8 large eggs, lightly beaten
  • 1/2 cup butter, melted
  • 1/4 cup all-purpose flour
  • 1 teaspoon kosher salt
  • freshly ground black pepper, to taste
  • 1 (8-ounce) bag salted pita chips, slightly crushed
  • 2 large tomatoes, coarsely chopped
  • 1/2 cup fresh basil, sliced, plus more, to taste, for garnish
  • 1 (8-ounce) block mozzarella, cubed
  • grape tomatoes, optional, to taste, halved, for topping

Directions

Step 1 –Lightly grease a 6-quart slow cooker with cooking spray.

Step 2 –Cook the bacon in a medium skillet until crisp, about 8-10 minutes.

Step 3 –Transfer the bacon to a paper-towel-lined plate.

Step 4 –Drain all but 2 tablespoons of the bacon drippings from the skillet, reserving the rest in the pan.

Step 5 –Add the onions to the reserved bacon drippings and sauté over medium heat until translucent, about 3 minutes.

Step 6 –Add the bell peppers and sauté until tender, about 3-4 minutes.

Step 7 –Add the garlic and cook until fragrant, about 1-2 minutes.

Step 8 –Transfer the skillet from the heat.

Step 9 –Whisk together the evaporated milk, the eggs, the melted butter, the flour, the salt, and the black pepper in a large bowl until frothy.

Step 10 –Layer the pita chips, the chopped tomatoes, the bell pepper mixture, the egg mixture, 1/2 cup of the basil, the mozzarella, and the bacon into the slow cooker.

Step 11 –Cover with a lid and cook the mixture on low until heated through and melted, about 4 hours.

Step 12 –Uncover and cook for 30 minutes.

Step 13 –Top with the extra basil and the grape tomatoes and serve.
