Ingredients
For the dressing:
- 1 avocado, peeled and pitted
- 1 1/2 cups buttermilk
- 1/4 cup fresh herbs, such as tarragon, sorrel, mint, parsley, and/or cilantro, chopped
- 2 tablespoons rice vinegar
- 1/2 teaspoon salt
For the salad:
- 3 cups romaine lettuce, chopped
- 1 cup cucumber, sliced
- 1 (15-ounce) can chickpeas, rinsed
- 1/4 cup low-fat Swiss cheese, diced
- 6 cherry tomatoes, halved
Directions
Step 1 –Add the avocado, the buttermilk, the fresh herbs, the vinegar, and the salt to a blender and purée until smooth.
Step 2 –In a large bowl, add the romaine lettuce, the sliced cucumbers, and 1/4 cup of the dressing and toss to combine.
Step 3 –Add the chickpeas, the Swiss cheese, and the cherry tomatoes to the top of the salad and serve.
