  • 4 1/2 ounces butter lettuce
  • 1/2 cup red onion or red spring onions, finely sliced
  • 1 cup panko breadcrumbs
  • 4 ounces Pecorino Romano, crumbled
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon whole-grain mustard
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon sugar

Step 1 –Add the butter lettuce, the red onion, the breadcrumbs, and the Pecorino Romano to a large bowl.

Step 2 –Combine the olive oil, the red wine vinegar, the whole-grain mustard, the salt, the pepper, and the sugar in a small bowl, whisking vigorously to combine.
