For the salad:

  • 1 small head cabbage, diced
  • 3 small cucumbers, diced
  • 4 medium green onions, sliced
  • 3 cups kale, finely chopped
  • 2 cups quinoa, cooked
  • lemons, optional, to taste, sliced, for garnish

For the dressing:

  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic
  • 1 small shallot
  • 1/2 cup fresh basil
  • 1/2 cup fresh parsley
  • 1/2 cup fresh dill
  • 1 cup spinach
  • 1/3 cup pumpkin seeds, optional
  • 1 teaspoon salt


Step 1 –In a large salad bowl, add the cabbage, the cucumbers, the green onions, the kale, and the quinoa, and toss to combine.
