Happy New Year Coffee-Cake Bake

The holidays are almost over, but there is one last thing to celebrate! Happy New Year Coffee-Cake Bake is a great way to ring in the year and your coffee will love you for it! We are making big plans for this moist cake loaded with tart apples and a crunchy brown sugar-cinnamon-walnut crumble. The plan is for the Happy New Year Coffee-Cake Bake to quickly disappear shortly upon arrival from the oven. What a delicious plan! Let’s celebrate!

Ingredients

For the cake:

  • 1/2 cup butter-flavored shortening
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1 3/4-2 cups tart apples, peeled and chopped

For the topping:

  • 3/4 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 2 tablespoons butter, cold
  • 1/2 cups walnuts, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease two (8-inch) square baking dishes.

Step 3 –In a large bowl with an electric mixer, add the shortening and the granulated sugar and beat until light and fluffy.

Step 4 –Add the eggs and the vanilla extract to the shortening mixture and beat to combine.

Step 5 –In a separate large bowl, add the flour, the baking powder, the baking soda, and the salt and whisk to combine.

Step 6 –Alternating with the sour cream and the flour mixture, gradually add each to the shortening mixture and beat well after each addition.

Step 7 –Add the apples to the batter mixture and stir to combine.

Step 8 –Equally transfer the batter mixture to the prepared baking dishes.

Step 9 –In a medium bowl, add the brown sugar and the cinnamon and whisk to combine.

Step 10 –With a pastry cutter, add the butter to the brown sugar mixture and cut until crumbly.

Step 11 –Add the walnuts to the brown sugar mixture and stir to combine.

Step 12 –Evenly sprinkle the walnut mixture over the batter in the baking dishes.

Step 13 –Bake until a toothpick inserted into the center of the cakes comes out clean, about 30-35 minutes.

Step 14 –Serve warm or cooled.
