Ingredients
- 4 cups zucchini, grated and squeezed dry with a towel after grating
- 1 1/4 cups heart-healthy baking mix
- 1/3 cup onion, minced
- 3 large egg whites, beaten
- 1 large egg, beaten
- 1 tablespoon olive oil
- 1/4 cup parmesan cheese, grated
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon parsley
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Mix the zucchini, the baking mix, the onion, the egg whites, the egg, the olive oil, the cheese, the salt, the pepper, and the parsley in a bowl.
Step 3 –Spray a 9×13-inch baking dish with cooking spray.
Step 4 –Pour the mixture into the prepared baking dish.
Step 5 –Bake the casserole until a toothpick inserted into the center comes out clean and the top is golden-brown, about 45-50 minutes.
Step 6 –Slice and serve.
