Homemade Pickle Chips

Ingredients

For the sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons chili sauce
  • 1 tablespoon ketchup
  • 1 1/2 teaspoons white vinegar
  • 1 1/2 teaspoons sriracha chili sauce
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon black pepper

For the fried pickles:

  • 1/2 cup whole buttermilk
  • 1 teaspoon black pepper
  • 1 (16-ounce) jar dill pickle chips, drained
  • 1 1/2 cups finely ground cornmeal
  • 1/2 cup all-purpose flour
  • canola oil, to taste, for frying

Directions

Step 1 –Stir the mayonnaise, the chili sauce, the ketchup, the vinegar, the sriracha, the Worcestershire sauce, the paprika, the salt, the mustard, and 1/8 teaspoon of the pepper together in a bowl.

Step 2 –Cover the sauce mixture and refrigerate it until ready to use.

Step 3 –Combine the buttermilk and the remaining pepper in a shallow dish.

Step 4 –Add the pickles to the buttermilk mixture and stir to coat.

Step 5 –Stir the cornmeal and the flour together in a separate shallow dish.

Step 6 –Add several pickles at a time to the cornmeal mixture, tossing to evenly coat.

Step 7 –Place the coated pickles on a baking sheet lined with wax paper or parchment paper.

Step 8 –Pour the oil in a large cast-iron skillet to a depth of 1-inch.

Step 9 –Heat the oil to 365 degrees F over medium-high heat.

Step 10 –Add the coated pickles in batches to the hot oil and fry until they are golden-brown and crisp, about 1-2 minutes.

Step 11 –Drain the pickle chips on paper towels.

Step 12 –Serve the pickle chips with the sauce.
