Homity Pie

One of the best traditional pies out of Britain, Homity Pie proves once and for all that vegetarian dishes can be just as delicious (if not more so) as meat ones. This potato pie has the tender, fluffy potato bites, of course, but it also features savory onions and fragrant, flavorful leeks in a thick, creamy sauce. Instead of a crust on top, Homity Pie chooses to cover everything in golden-brown, melty cheese; it has potatoes and cheese on a buttery pie crust, which is sure to get your mouth watering just by thinking about it. This dish is at the intersection of vegetarian and very amazing!

Ingredients

  • 6 cups potatoes, diced
  • 1 (9-inch) deep dish pie pastry
  • 1/4 cup butter
  • 1 large onion, diced
  • 2 leeks, washed extremely thoroughly and chopped
  • 5 cloves garlic, minced
  • 2 teaspoons fresh thyme, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3/4 cup heavy cream
  • 8 ounces cheddar cheese, shredded

Directions

Step 1 –Boil a large pot of salted water.

Step 2 –Boil the potatoes in the salted water until just tender, about 5 minutes.

Step 3 –Drain the potatoes.

Step 4 –Preheat the oven to 375 degrees F.

Step 5 –Pierce the pie pastry on the bottom and on the sides with a fork several times.

Step 6 –Melt the butter in a large saucepan over medium heat.

Step 7 –Sauté the onions and the leeks in the melted butter until slightly caramelized, about 10 minutes.

Step 8 –Add the garlic and cook until fragrant, about 3 minutes.

Step 9 –Transfer the saucepan from the heat.

Step 10 –Add the thyme, the salt, the pepper, and the cream to the onion mixture, mixing well.

Step 11 –Add the potatoes and 1/2 of the cheese to the onion mixture, gently folding them to combine.

Step 12 –Spoon the potato mixture into the pie pastry and top it with the remaining cheese.

Step 13 –Bake until the cheese is just starting to brown, about 25-30 minutes.

Step 14 –Let the pie rest for 10 minutes.

Step 15 –Serve.
