Honey Lime Chicken Enchiladas

Ingredients

  • 2 tablespoons olive oil
  • 1/2 onion, thinly sliced
  • 1 rotisserie chicken, shredded
  • 1/3 cup honey
  • 1/4 cup lime juice
  • 1 (10-ounce) can green enchilada sauce, divided
  • 1 (4.5-ounce) can diced green chiles
  • 1 tablespoon chili powder
  • 1 (16-ounce) can refried beans
  • 1/2 cup water
  • 2 cups Mexican four-cheese blend, shredded, divided
  • 8 flour tortillas or 12 corn tortillas

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Spray a 9×13-inch baking dish and a 9×9-inch baking pan with nonstick spray.

Step 3 –Heat a large skillet over medium heat.

Step 4 –Coat the skillet with the olive oil.

Step 5 –Add the onion and cook until it is golden-brown and translucent, about 6-8 minutes.

Step 6 –Add the chicken, the honey, the lime, 1/2 can of the enchilada sauce, the green chiles, and the chili powder.

Step 7 –In a small saucepan over medium heat, combine the refried beans, the water, and 1 cup of the cheese, stirring until the cheese is melted and the mixture is completely combined.

Step 8 –Fill the tortillas evenly with the shredded meat and the refried bean mixture, making sure not to overstuff the tortillas.

Step 9 –Roll the tortillas up and place them seam-side down in the prepared dish and pan.

Step 10 –Pour the remainder of the sauce evenly over the enchiladas.

Step 11 –Sprinkle the remaining 1 cup of the cheese over top of the enchiladas.

Step 12 –Bake, uncovered, for 30 minutes.

Step 13 –Turn the broiler on and transfer the enchiladas close to the broiler.

Step 14 –Broil until the cheese is slightly brown and crispy, about 1-2 minutes.

Step 15 –Serve hot!
