Irish Quick Bread

Bread is the best. Homemade bread… well, that’s even better! Take it up one more notch and you’ve got Irish Quick Bread! This warm, soft on the inside, crispy on the outside, made-from-scratch delight is everything you’re looking for in a lovely loaf. Perfect for anything from pilling it high with your favorite sandwich toppings to sopping up your beloved soup, Irish Quick Bread is sure to please every time!

Ingredients

  • 2 cups all-purpose flour, plus more, to taste, for dusting a work surface
  • 2 cups whole-wheat flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 3 tablespoons unsalted butter, cold and cubed
  • 1 large egg
  • 1 2/3 cups buttermilk

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Lightly coat a large cast-iron skillet with cooking spray.

Step 3 –In a large bowl, add 2 cups of the all-purpose flour, the whole-wheat flour, the granulated sugar, the baking soda, and the salt and whisk to combine.

Step 4 –Add the butter to the flour mixture and use your hands to mix until some pea-sized and larger pieces form.

Step 5 –In a small bowl, add the egg and the buttermilk and whisk to combine.

Step 6 –Make a well in the center of the flour mixture, then pour the egg mixture into it.

Step 7 –Starting from the center, use a wooden spoon to mix the dough until it is too stiff to stir.

Step 8 –Lightly dust a work surface with the extra all-purpose flour.

Step 9 –Turn the dough onto the work surface and use floured hands to form it into a ball.

Step 10 –Knead the dough ball until no streaks remain, about 30 seconds. Don’t overwork it or the bread will be tough.

Step 11 –Transfer the dough to the prepared skillet and use a very sharp knife to score a 1/2-inch-deep “x” on top.

Step 12 –Bake the bread for 15 minutes.

Step 13 –Reduce the temperature to 400 degrees F and bake the bread until it is golden-brown and the bottom sounds hollow when tapped, about 30-35 minutes.

Step 14 –Let the bread cool in the skillet, about 5-10 minutes.

Step 15 –Transfer the bread to a wire rack.

Step 16 –Slice and serve.
