Ingredients
- water, to taste
- 1 medium head cauliflower, broken into small florets
- 1 cup sour cream
- 1 cup cheddar cheese, shredded
- 1/2 cup cornflakes, crushed
- 1/4 cup green pepper, chopped
- 1/4 cup sweet red pepper, chopped
- 1 teaspoon salt
- 1/4 cup parmesan cheese, grated
- paprika, to taste
Directions
Step 1 –Preheat the oven to 325 degrees F.
Step 2 –Grease an 8-inch square baking dish.
Step 3 –In a large saucepan over medium-high heat, add enough of the water so that it is 1-inch deep.
Step 4 –Add the cauliflower florets to the water and bring to a boil.
Step 5 –Reduce the heat to medium-low. Cover the saucepan and simmer the florets until they are crisp-tender, about 5-10 minutes. Drain the cauliflower.
Step 6 –In a large bowl, add the cooked cauliflower, the sour cream, the cheddar cheese, the cornflakes, the green pepper, the sweet red pepper, and the salt and stir to combine.
Step 7 –Pour the cauliflower mixture into the prepared baking dish and sprinkle with the parmesan cheese and the paprika.
Step 8 –Bake the casserole until it is heated through, about 30-35 minutes.
Step 9 –Serve.
