Italian Chicken Skewers

Sometimes, when enjoying Italian cuisine, it can feel like the protein is always playing second fiddle to the pasta. Italian Chicken Skewers let the juicy, savory meat truly be the star of the show, decked out in a fabulous coating of classic aromatic seasonings and sweet, mellow tomato paste. Accompanied by some crunchy cubes of toasty, buttery bread, Italian Chicken Skewers positively dazzle your eyes and tastebuds at the same time! Ingredients

  • 1 pound of chicken breasts, boneless, skinless, and cut into large cubes
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2 tablespoons tomato paste
  • 1/4 cup extra-virgin olive oil, plus more for drizzling
  • 3 cloves garlic, minced
  • 1 tablespoon fresh Italian parsley, chopped, plus more leaves for garnish
  • 1 baguette of French bread, cut into cubes

Directions

Step 1 –Soak eight wooden skewers in water for 20 minutes.

Step 2 –Season the chicken with salt and pepper.

Step 3 –Combine the tomato paste, olive oil, garlic cloves, and chopped parsley in a large bowl.

Step 4 –Add the chicken and toss it to fully coat.

Step 5 –Refrigerate the chicken and marinate for 30 minutes.

Step 6 –Preheat the grill to medium-high heat.

Step 7 –Skewer the chicken and bread, alternating between the two.

Step 8 –Drizzle the chicken and bread with olive oil.

Step 9 –Season the chicken and bread with salt and pepper.

Step 10 –Grill the skewers, turning occasionally, until the chicken is cooked through at 165 degrees F and the bread is slightly charred, for about 10 minutes.

Step 11 –Garnish with parsley.

Step 12 –Serve.
