Jack Chicken Casserole

Sometimes keeping it simple is the way to go! Jack Chicken Casserole is full of flavor, takes less than ten ingredients to make, and doesn’t require much effort at all! Juicy chicken, tender pasta, crispy bacon, a creamy sauce, and melty cheese… what’s not to love? Jack Chicken Casserole makes a case for simplistic and proves it’s worth eating all the time!

Ingredients

  • 1 (16-ounce) box spiral pasta, uncooked
  • 6 strips bacon
  • 4-5 chicken breasts, boneless, skinless, and cubed
  • 1 tablespoon garlic powder
  • salt, to taste
  • pepper, to taste
  • 2 cans cream of chicken soup
  • 2 cups Monterey Jack cheese, shredded and divided

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Coat a 9×13-inch baking dish with nonstick cooking spray.

Step 3 –In a large pot of salted boiling water, cook the pasta to al dente according to the package directions. Drain and return to the pot.

Step 4 –While the pasta cooks, in a large skillet over medium heat, cook and crumble the bacon.

Step 5 –Move the cooked bacon to a plate.

Step 6 –In the same skillet, add the chicken, the garlic powder, the salt, and the pepper in the bacon drippings and cook until the chicken reaches 165 degrees F internally.

Step 7 –Add the cooked chicken, the cream of chicken soup, and 1 cup of the cheese to the pasta and mix well.

Step 8 –Pour the pasta mixture into the prepared baking dish and top with the crumbled bacon and the remaining cheese.

Step 9 –Bake until the cheese is melted and beginning to brown on top, about 20 minutes.

Step 10 –Serve.
