Jackie Kennedy Waffles

No joke, this is actually how Jackie Kennedy made waffles. And wow, Jackie Kennedy Waffles blows other waffles out of the water; who could have known the style icon also knew how to bring breakfast to the next level? The waffles are crisp on the outside and so, oh-so impossibly fluffy on the inside. They’re like little clouds of tender delicious goodness, ready for butter and hot maple syrup for the full breakfast experience! Jackie Kennedy Waffles are how to do waffles justice!

Ingredients

  • 1/2 cup butter, plus more, to taste, for serving
  • 1 tablespoon sugar
  • 2 egg yolks plus 2 egg whites, divided, egg whites stiff-beaten
  • 1 cup plus 1 tablespoon cake flour, sifted
  • 7/8 cup milk or 1 cup buttermilk
  • salt, to taste
  • 4 teaspoons baking powder
  • maple syrup, hot, for serving

Directions

Step 1 –Preheat a waffle iron.

Step 2 –Cream 1/2 cup of the butter and the sugar together until light and fluffy.

Step 3 –Add the egg yolks and beat.

Step 4 –Add the cake flour and the milk, alternating between the two and mixing well after each addition.

Step 5 –Fold in the egg whites.

Step 6 –Gently fold in the salt and the baking powder. The batter should be very thick and fluffy.

Step 7 –Spray cooking spray on the waffle iron and add enough batter to cook one waffle.

Step 8 –Cook the waffle according to the waffle iron directions, about 4-5 minutes.

Step 9 –Repeat the cooking process with the remaining batter.

Step 10 –Serve with the extra butter and the maple syrup.
