- 1/2 cup panko
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt
For the salad:
- 1 small head iceberg lettuce, outer leaves removed and discarded, cut into wedges
- blue cheese dressing, to taste, homemade or store-bought
- 1 cup cherry tomatoes, quartered
- 2 chives, thinly sliced
- 3 tablespoons blue cheese crumbles
Directions
Step 1 –In a small skillet over medium heat, heat the oil.
Step 2 –In a small bowl, add the panko, the smoked paprika, the onion powder, the garlic powder, and the kosher salt and stir to combine.
Step 3 –Add the panko mixture to the oil and toast, stirring frequently, until it is golden and crisp, about 2-3 minutes. Transfer to a bowl.
Step 4 –Place the iceberg wedges on serving plates, top with the dressing, the tomatoes, the chives, the blue cheese crumbles, and the panko mixture.
Step 5 –Serve.
