Ingredients
- 2 (15.25-ounce) cans whole kernel corn, drained
- 2 jalapeños, seeded and diced, plus more, to taste, sliced, for garnish
- 1 cup Colby Jack or pepper jack cheese, shredded
- 2/3 cup sour cream
- 2 teaspoons Tajín® seasoning, optional
- 1 (8-ounce) package cream cheese, cubed
- 6 slices bacon, cooked and chopped, divided
- 1/4 cup cilantro, chopped
- 1/4 cup queso fresco
- 1 lime, 1/2 juiced and 1/2 cut into wedges
- tortilla chips or corn chips, to taste, for serving

Directions
Step 1 –In a slow cooker, add the corn, 2 of the diced jalapeños, the Colby Jack, the sour cream, the Tajín seasoning, and the cream cheese and stir to combine.
Step 2 –Cover and cook on low, stirring occasionally, until melted, about 2 hours.
Step 3 –Add almost all of the bacon to the dip mixture and stir to combine, reserving the remainder for the top.

Step 4 –Top the dip mixture with the cilantro, the queso fresco, the lime juice, the extra sliced jalapeños, and the reserved bacon.
Step 5 –Serve the dip with the lime wedges and the tortilla chips.
