  • 1 (19-ounce) package frozen cheese tortellini
  • 1/2 cup mayonnaise
  • 1/4 cup 2% milk
  • 1/4 cup plus 1/3 cup parmesan cheese, shredded, divided
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 8 cups romaine, torn
  • 1 cup seasoned salad croutons
  • cherry tomatoes, optional, halved


Step 1 –Cook the tortellini to al dente according to the package directions.

Step 2 –While the pasta is cooking, in a small bowl, combine the mayonnaise, the milk, 1/4 cup of the parmesan, the lemon juice, and the garlic together.

Step 3 –Drain the tortellini and rinse it in cold water.

Step 4 –Transfer the tortellini to a large bowl and add the romaine and the remaining parmesan.

Step 5 –Just before serving, drizzle the tortellini mixture with the dressing and toss to coat.

Step 6 –Top the salad with the croutons and the tomatoes.

Step 7 –Serve.
