Ingredients

  • 24 ounces riced cauliflower
  • 2 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 2 tablespoons dried chives
  • 1 cup sour cream
  • 3 cups cheddar cheese, shredded, divided
  • 1 pound bacon, cooked, crumbled, divided
  • kosher salt, to taste
  • pepper, to taste

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Combine the cauliflower, the butter, the garlic, the chives, the sour cream, 2 cups of the cheese, 2/3 of the bacon, the salt, and the pepper in a large mixing bowl.

Step 3 –Pour the cauliflower mixture into a 9×9-inch casserole dish and top with the remaining cheese and the remaining bacon.
