Let’s celebrate all the yummy flavors the amazing people of this planet have brought us with some of the finest world cuisine, Lehmejun! Some refer to it as Armenian Pizza, and we love the sound of that. Get your tastebuds ready for an adventure of a lifetime with these fluffy tortillas topped with a blend of juicy beef and lamb that brings a tomato-y, herby, and spicey kick. Make sure you have plenty of tangy lemons on hand, because a little squeeze of those wedges makes all the difference! Lehmejun might just give you the travel bug and we think that’s the best thing ever!

Ingredients

  • 1 pound ground beef
  • 1 pound ground lamb
  • 1 medium onion, halved and sliced
  • 1 (6-ounce) can tomato paste
  • 2 jalapeƱo peppers, seeded and diced
  • 1/4 cup fresh parsley, minced
  • 2 tablespoons harissa chili paste
  • 2 tablespoons dry red wine
  • 1 tablespoon ground sumac
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 flour tortillas
  • cooking spray, to taste
  • 1 medium lemon, cut into wedges

Directions

Step 1 –Preheat the broiler.

Step 2 –Heat a large skillet over medium-high heat.

Step 3 –Add the beef, the lamb, and the onion to the skillet and cook until the meat is no longer pink, about 5-7 minutes.

Step 4 –Drain the excess liquid from the skillet.

Step 5 –In a small bowl, combine the tomato paste, the jalapeƱos, the parsley, the harissa paste, the red wine, the sumac, the cinnamon, the salt, and the pepper.

Step 6 –Add the tomato paste mixture to the meat mixture and stir to combine.

Step 7 –Cook the meat mixture, stirring occasionally, until well-blended and heated through, about 5-7 minutes.

Step 8 –Transfer the meat mixture from the heat.

Step 9 –Spray both sides of the tortillas with cooking spray and place them on a baking sheet.

Step 10 –Broil the tortillas 4-5 inches from the heat source until they are crisp and lightly browned, about 45 seconds-1 minute per side.

Step 11 –Spread the meat mixture over the tortillas.

Step 12 –Serve the Lehmejun with the lemon wedges.
