Lighter Egg Salad Sliders

Ingredients

  • 8 large eggs
  • 1 Roma tomato, diced
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh dill
  • 1 tablespoon chives, chopped
  • 1/4 teaspoon onion powder
  • garlic powder, to taste
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 package Hawaiian rolls
  • 2 cups arugula

Directions

Step 1 –Place the eggs in a large saucepan, cover them with cold water by 1 inch, bring it to a boil, and cook for 1 minute.

Step 2 –Cover the saucepan with a tight-fitting lid, transfer it from the heat, and let it set, about 8-10 minutes.

Step 3 –Drain the eggs well, let them cool, then peel and dice them.

Step 4 –In a large bowl, roughly mash the eggs with the tomatoes, the Greek yogurt, the mayonnaise, the dill, the chives, the onion powder, the garlic powder, the salt, and the pepper.

Step 5 –Spoon the egg salad onto the rolls and top with the arugula.

Step 6 –Serve.
