Ingredients

For the chicken:

  • 1 1/2 pounds chicken breasts, boneless and skinless, cut into 1-inch chunks
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups cornflakes, crushed
  • rice, to taste, cooked and warm, for serving

For the sauce:

  • 1 1/2 cups chicken broth
  • 2 tablespoons hoisin sauce
  • 2 tablespoons rice vinegar
  • 3 tablespoons reduced-sodium soy sauce
  • 3 tablespoons brown sugar, packed
  • 2 tablespoons cornstarch

Directions

Step 1 –Preheat the oven to 450 degrees F.

Step 2 –Coat a cooling rack with nonstick spray and place it on a baking sheet.

Step 3 –Working in batches, dredge the chicken pieces in the flour, then dip them into the eggs, and dredge them in the crushed cornflakes and press to coat.

Step 4 –Place the chicken pieces on the prepared baking sheet and coat with nonstick spray.

Step 5 –Bake the chicken pieces until they reach an internal temperature of 165 degrees F and are golden-brown and crisp, about 13-15 minutes.

Step 6 –In a large saucepan over medium-high heat, combine the chicken broth, the hoisin, the rice vinegar, the soy sauce, the brown sugar, and the cornstarch until it thickens, about 1-2 minutes.

Step 7 –Stir the cooked chicken pieces into the sauce and gently toss to combine.

Step 8 –Serve the chicken over the rice.
