Luda-Couscous

Don’t mind this crazy title, it’s not as foolish as it sounds! Luda-Couscous is just so ding-dang delicious, we had to name it something that would really catch your eye! Heart-healthy quinoa and chickpeas take the main stage of this dish. And they’re simply mixed with fresh peppers, onions, tomatoes and sweet raisins to create a savory, fluffy, delicious blend. See? Luda-Couscous is not ridiculous… no, more like amazing!

Ingredients

  • 1 1/2 cups water
  • 1/2 cup orange juice
  • 1 (15-ounce) can chickpeas or garbanzo beans, rinsed and drained
  • 2 medium tomatoes, seeded and chopped
  • 1 medium sweet red pepper, julienned
  • 1 cup quinoa, rinsed
  • 1 small red onion, finely chopped
  • 1/2 cup raisins
  • 1 teaspoon curry powder
  • 1/2 cup fresh cilantro, minced

Directions

Step 1 –In a large saucepan, bring the water and the orange juice to a boil.

Step 2 –Stir the chickpeas, the tomatoes, the red pepper, the quinoa, the onion, the raisins, and the curry into the mixture and return to a boil.

Step 3 –Lower the heat, cover, and simmer the quinoa mixture until the liquid is absorbed, about 15-20 minutes.

Step 4 –Transfer the saucepan from the heat and fluff with a fork.

Step 5 –Sprinkle the couscous with the cilantro.

Step 6 –Serve.
