Maritime Pasta

The gentle lapping of the ocean by the shore. The salt in the air. The call of (thankfully distant) seagulls. The scent of a hot bowl of Maritime Pasta. All of these things invoke the ocean, but only Maritime Pasta is something you can appreciate with your taste buds (we assume you don’t like the taste of gulls). Tender pasta in an herbaceous basil pesto sauce, with juicy pink shrimp and bright little peas captures the bounty of the ocean in each refreshing bite. Oh, and a little parmesan never hurt either. Make your own beach day with Maritime Pasta.

Ingredients

  • 12 ounces penne pasta
  • 1 pound medium-size raw shrimp, peeled and deveined
  • 1 cup frozen sweet peas
  • 1 (7-ounce) container refrigerated basil pesto
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 ounce (about 1/2 cup) parmesan cheese, shaved, for topping

Directions

Step 1 –In a large pot of salted, boiling water, cook the pasta to al dente, according to the package directions. During the final 2 minutes of cooking time, add the shrimp and the peas to the boiling water.

Step 2 –Reserve 1/2 cup of the cooking water in a small heatproof bowl and drain the remaining liquid from the pasta mixture.

Step 3 –Return the pasta mixture to the pot.

Step 4 –Add the pesto, the salt, and the pepper to the pasta mixture and stir to combine.

Step 5 –Stir in the reserved cooking water, 1/4 cup at a time, until the desired sauce consistency is reached. You may not need to use all of the cooking liquid.

Step 6 –Transfer the pasta mixture to a serving bowl and sprinkle it with the parmesan.

Step 7 –Serve immediately.
