Memaw’s Mayo Pork Chops

Memaw knew her way around the kitchen, and how to make the main course a meal to remember every time. Memaw’s Mayo Pork Chops is just one example, and yet it’s one of our favorites: the savory pork is coated in tangy, creamy mayo for extra richness and then covered in crunchy, cheesy, seasoned breadcrumbs. Roasted to a shimmering golden brown, Memaw’s Mayo Pork Chops draws everyone to the dinner table to feast upon the best pork chops around. Make up a big pile of mashed potatoes and roasted veggies for sides and you have a meal Memaw would be proud of!

Ingredients

  • 1 cup plain breadcrumbs
  • 3 tablespoons parmesan cheese
  • 1 1/2 teaspoons Montreal seasoning, more or less to taste
  • ground black pepper, to taste
  • 4 tablespoons mayonnaise
  • 4 lean pork chops, 1-inch thick and bone-in

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a baking sheet with parchment paper.

Step 3 –Combine the breadcrumbs, the parmesan, the Montreal seasoning, and the ground black pepper together in a shallow dish.

Step 4 –Spread 1/2 tablespoon of the mayo on each side of the pork chops.

Step 5 –Dredge the pork chops in the breadcrumb mixture.

Step 6 –Place the pork chops on the prepared baking sheet and roast until at least 145 degrees F internally, about 45-60 minutes.

Step 7 –Serve hot
