If we were playing a game of truth or dare and you dared us to make Sleepover Bread, well, we’d go grab our fuzzy slippers and a loaf pan and consider it a win! You would, too. Don’t snooze on the moist, sweet flavors this yummy treat brings. You’ll be dreaming of the plump blueberries and citrus flavors all night long. Whether you choose to dance the night away or catch a few z’s, everyone at the party will truthfully say that Sleepover Bread is the best!


  • 1/2 cup old-fashioned rolled oats
  • 2 cups white whole-wheat flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 large eggs
  • 1 cup sugar
  • 6 tablespoons grapeseed oil
  • 1 tablespoon lemon zest
  • 1 1/2 cups zucchini, shredded
  • 2 cups fresh blueberries
  • 1/4 cup confectioners’ sugar
  • 1 teaspoon lemon juice


Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 9×5-inch loaf pan with cooking spray.

Step 3 –Evenly spread the oats on a rimmed baking sheet.

Step 4 –Bake the oats until they are lightly toasted, about 10 minutes.

Step 5 –Let the oats cool for 10 minutes.

Step 6 –In a large bowl, add the toasted oats, the flour, the baking powder, and the salt and whisk to combine.

Step 7 –In a medium bowl, add the eggs, the sugar, the oil, and the lemon zest and whisk to combine.

Step 8 –Add the zucchini to the egg mixture and stir until it is incorporated.

Step 9 –Fold the zucchini mixture into the flour mixture until it is just combined.

Step 10 –Fold the blueberries into the bread batter.

Step 11 –Pour the bread batter into the prepared loaf pan.

Step 12 –Bake the bread until a toothpick inserted into the center comes out clean, about 1 hour 15 minutes.

Step 13 –Let the bread cool in the pan for 5 minutes.

Step 14 –Run a knife along the sides of the loaf to loosen the bread from the pan and then invert it onto a wire rack.

Step 15 –Let the bread cool completely, about 1 hour.

Step 16 –In a small bowl, add the confectioners’ sugar and the lemon juice and whisk until it is smooth.

Step 17 –Drizzle the glaze over the cooled loaf.

Step 18 –Slice and serve.
