Miracle Mac

Ingredients

  • 2 1/4 cups milk, divided
  • 2 cups macaroni, uncooked
  • 3/4 teaspoon salt
  • black pepper, optional, to taste
  • 1 teaspoon Dijon mustard, optional
  • 1/4 teaspoon smoked paprika, optional
  • 1 cup cheddar cheese, shredded

Directions

Step 1 –Combine 2 cups of the milk and the macaroni in a medium pot.

Step 2 –Place a lid on top of the pot and bring the mixture to a boil over medium-high heat, stirring occasionally.

Step 3 –As soon as it reaches a boil, reduce the heat to low and let it simmer, stirring until the pasta is tender, about 10 minutes. Make sure to stir to keep the pasta from sticking, promptly replacing the lid after each stir to help keep the steam in.

Step 4 –Once the pasta is soft and has absorbed most of the milk, season the macaroni with the salt, the pepper, the Dijon mustard, and the paprika. Add the remaining milk if the pasta looks dry.

Step 5 –Turn off the heat.

Step 6 –Stir the shredded cheese into the pasta until it’s melted and creamy.

Step 7 –Serve immediately.
