Ingredients

  • 1 (8.5-ounce) package cornbread/muffin mix
  • 1 pound ground beef
  • 2 (14.5-ounce) cans diced tomatoes, drained
  • 2 cups frozen mixed vegetables, thawed
  • 1 (6-ounce) can tomato paste
  • 1-2 teaspoons Cajun seasoning, plus more to taste
  • 1 cup cheddar cheese, shredded
  • 2 green onions, thinly sliced

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 7×11-inch baking dish.

Step 3 –Prepare the cornbread batter according to the package directions.

Step 4 –Spread the batter in the prepared baking dish.

Step 5 –In a large skillet, cook the beef over medium heat until it is no longer pink, about 5-7 minutes.

Step 6 –Drain the fat from the skillet.

Step 7 –Add the tomatoes, the mixed vegetables, the tomato paste, and the Cajun seasoning to the beef and bring the mixture to a boil.

Step 8 –Reduce the heat and simmer the beef mixture, uncovered, for 5 minutes.

Step 9 –Pour the beef mixture over the cornbread batter.

Step 10 –Sprinkle the beef mixture with the cheese.

Step 11 –Bake, uncovered, until the top of the casserole is golden-brown and the cheese has melted, about 25-30 minutes.

Step 12 –Sprinkle the casserole with the onions and serve.
