Ingredients

  • 1 tablespoon canola oil
  • 1 small onion, chopped
  • 1/4 cup pine nuts
  • 1 pound shrimp, peeled, deveined, and uncooked
  • 1 cup pearl couscous
  • 2 tablespoons lemon juice
  • 3 teaspoons Moroccan seasoning
  • 1 teaspoon garlic salt
  • 2 cups hot water
  • fresh parsley, optional, to taste, minced

Directions

Step 1 –In a large skillet, heat the oil over medium-high heat.

Step 2 –Sauté the onion and the pine nuts in the oil until the onion is tender, about 2-3 minutes.

Step 3 –Stir the shrimp, the couscous, the lemon juice, the Moroccan seasoning, the garlic salt, and the water to the onion mixture and bring it to a boil.
