Whether you reside near the peaks of the snowy Rockies or you just like a hearty breakfast for lazy weekends, Mountain Man Skillet will keep you full, no matter where your adventures take you. Fatty sausage, tender potatoes, fluffy eggs, and melty cheese… yep, sounds like enough protein for anyone out in the wilderness, whether that be among the wildlife or, well, real life (not sure which is more frightening). What’s that, the mountains are calling? Oh, before you go, you must have a big, hefty serving of Mountain Man Skillet!

Ingredients

  • 7 sausage links, cut into small discs
  • 2 tablespoons canola oil
  • 6 medium potatoes, cooked and cubed
  • 1 tablespoon seasoning salt
  • 6 eggs
  • 1 cup cheddar cheese

Directions

Step 1 –Heat a large cast iron skillet over medium heat.

Step 2 –Cook the sausage links. Once cooked, transfer them to a plate to cool.

Step 3 –Add the canola oil to the same cast iron skillet over medium heat.

Step 4 –Add the cooked potatoes to the skillet.

Step 5 –Add the seasoning salt to the potatoes.

Step 6 –Cook while stirring for about 10 minutes, until the potatoes are brown and crispy.

Step 7 –Move the potatoes to one side of the skillet.

Step 8 –Whisk the eggs in a mixing bowl.

Step 9 –Add the eggs to the empty side of the skillet and scramble them.

Step 10 –Add the sausage to the potato and egg mixture.

Step 11 –Stir the ingredients together to evenly distribute the eggs and sausage among the potatoes.

Step 12 –Sprinkle the cheese over top of the mixture.

Step 13 –Place a lid on the skillet and allow the skillet to rest until the cheese has melted.

Step 14 –Serve.
