Move In Casserole

Ah, the eternal question of what to make as your first meal in your new home. Sure, you could just order out some pizza, but don’t you want to take your new kitchen for a spin? We sure would. Move In Casserole offers up a great meal to make with your new stove and oven: a cheesy, melty magnificence just loaded with hearty, tender mushrooms, savory turkey, and fabulous egg noodles. Even Move In Casserole has moved into its own house, with a roof made of crunchy butter breadcrumbs. It’s the perfect way to reenergize for unpacking with a great flavor you won’t want to wait to unbox!

Ingredients

  • 2/3 cup panko bread crumbs
  • 3/4 cup parmesan, freshly grated and divided
  • 6 tablespoons butter, plus more for the pan, divided
  • kosher salt, to taste
  • 1 small yellow onion, chopped
  • 1 1/4 cups cremini mushrooms, sliced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken stock
  • 2 cups cheddar, shredded
  • 3 cups turkey, cooked and cubed
  • 8 ounces egg noodles, cooked
  • 1 cup frozen peas
  • 3 tablespoons parsley, plus more for garnish, freshly chopped
  • 1 tablespoon lemon juice
  • ground black pepper, to taste

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Coat a 9×13-inch baking dish with butter.

Step 3 –In a medium bowl, combine the panko with 1/4 cup of the parmesan and 3 tablespoons of the butter. Season with the salt.

Step 4 –In a medium saucepan over medium-high heat, melt the remaining butter.

Step 5 –Add the onion, the mushroom, and the salt to the butter and cook, stirring until softened, about 6 minutes.

Step 6 –Add the flour to the veggie mixture and cook, while stirring, about 1 minute.

Step 7 –Add the chicken stock to the veggie mixture and bring the mixture to a boil.

Step 8 –Lower the stove-top temperature to medium-low and simmer the veggie mixture, consistently stirring, until thickened, about 5 minutes.

Step 9 –Transfer the veggie mixture away from the heat and stir the cheddar and the remaining parmesan in until melted.

Step 10 –Add the turkey, the noodles, the peas, the parsley, and the lemon juice to the cheese mixture and season with the salt and the pepper.

Step 11 –Pour the turkey mixture into the prepared baking dish and sprinkle with the buttered panko crumbs.

Step 12 –Bake until golden and bubbly, about 20 minutes.

Step 13 –Top with the parsley and serve.
