Muffin Mix Cookies

Sometimes you have to be a MacGyver® (look it up if you don’t know, ha) in the kitchen and make something out of something that becomes something else! The answer to this mystery creation is found in these Muffin Mix Cookies. When you have baking supplies (but maybe just not all of them), use a muffin mix and some baking staples, such as butter, eggs, and vanilla extract, to create some of the moistest, most delicious, fresh-from-the-oven cookies to cure your hurry-up-and-fix-it sweet tooth. Right before your very eyes, a muffin mix (that makes muffins) becomes a much desired, highly anticipated, unexpected cookie. Yes, Muffin Mix Cookies are a fix-it-all kind of treat. Out of flour, no problem, “MacGyver” this and get to making some cookies!

Ingredients

  • 10 tablespoons unsalted butter, room temperature
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1 (18.25-ounce) box chocolate chip muffin mix

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Line two 18×26-inch baking sheets with parchment paper.

Step 3 -In a bowl of a stand mixer, add the butter and beat until it is light and fluffy, about 2-3 minutes.

Step 4 -Add the egg and the vanilla extract to the butter and mix to combine.

Step 5 -Add the muffin mix to the butter mixture and mix until it is just combined. Be careful not to overmix.

Step 6 -Use a cookie scoop to drop 2 tablespoon-sized scoops of the cookie dough on the prepared baking sheets, about 1 inch apart.

Step 7 -Bake the cookies until golden around the edges but still soft, about 11-13 minutes.

Step 8 -Transfer the baking sheets to a wire rack and let the cookies cool, about 2 minutes.

Step 9 -Place the cookies on the wire rack and let them cool completely.

Step 10 -Serve.
