Ingredients
- 1 (2.5-3-pound) spaghetti squash, cooked and halved
- 1 cup sharp cheddar cheese, grated, divided
- 2 cups cottage cheese
- 3 large eggs
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3 cups broccoli florets
- 2 tablespoons water
Directions
Step 1 –Arrange a rack in the middle of the oven.
Step 2 –Preheat the oven to 350 degrees F.
Step 3 –Scrape the strands out from the inside of the cooked spaghetti squash using a fork, placing them into a bowl.
Step 4 –Add 1/2 cup of the cheddar cheese, the cottage cheese, the eggs, the salt, and the pepper to a large bowl and stir to combine.
Step 5 –In a large, ovenproof skillet over medium-high heat, add the broccoli and the water and cook, stirring occasionally, until the broccoli is crisp-tender and the water has evaporated, about 2-3 minutes. Transfer the skillet away from the heat.
Step 6 –Add the spaghetti squash and the cheese mixture to the broccoli mixture and stir until they are combined.
Step 7 –Smooth the top of the mixture into an even layer, then sprinkle with the remaining cheddar cheese.
Step 8 –Bake until the casserole is set and a thin knife inserted into the center comes out clean, about 1 hour.
Step 9 –Plate and serve.
