Ingredients

  • 1 (16-ounce) bottle Russian or Catalina salad dressing
  • 2/3 cup apricot preserves
  • 2 (1-ounce) envelopes onion soup mix
  • 16 chicken breasts, boneless, skinless, and halved
  • rice, hot, cooked, to taste, for serving

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a bowl, combine the dressing, apricot, and soup mix.

Step 3 –Place the chicken in two un-greased 9×13-inch baking dishes.

Step 4 –Top the chicken with the dressing mixture.

Step 5 –Cover and bake the chicken for 20 minutes.

Step 6 –Baste the chicken.
