No-Shell Casserole

Muy delicioso! Yep, that’s No-Shell Casserole for you. It’s packed with all your favorite fiesta-filled flavors that will really spice up your night! Melty cheese, mildly spicy ground beef, juicy veggies, and crunchy tortilla chips… it’s really got it all! And you don’t even need to wrap it up in anything. Nope, No-Shell Casserole is best chowed down on with some salty tortilla chips! Let’s get this festive food fest started!

Ingredients

For the casserole:

  • 1 tablespoon vegetable oil
  • 2 red or yellow bell peppers, stemmed, seeded, and thinly sliced
  • 1 yellow onion, thinly sliced
  • 1 poblano pepper, stemmed, seeded, and chopped
  • 3 cloves garlic, chopped
  • 1 1/2 pounds lean ground beef
  • 1 (1-ounce) packet taco seasoning
  • 1 (10-ounce) can mild diced tomatoes and green chiles, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup fresh or frozen corn kernels
  • 1 1/2 teaspoons kosher salt
  • 1 (13-ounce) bag round tortilla chips
  • 1 (8-ounce) bag Mexican-style cheese blend, shredded

For serving:

  • tortilla chips, to taste
  • lettuce, to taste, shredded
  • pico de gallo, to taste
  • avocado, to taste
  • cilantro, to taste, chopped
  • sour cream, to taste
  • black olives, to taste, sliced
  • hot sauce, to taste

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Lightly grease a 13×9-inch baking dish.

Step 3 –In a large Dutch oven over medium heat, heat the oil.

Step 4 –Add the bell pepper, the onion, the poblano, and the garlic to the oil and cook, stirring occasionally, until the veggies soften, about 10-12 minutes.

Step 5 –Add the beef and the taco seasoning to the veggie mixture and cook, while crumbling the meat, until the beef is no longer pink, about 6-8 minutes.

Step 6 –Add the tomatoes and green chiles, the black beans, the corn, and the salt to the beef mixture and cook, stirring occasionally, until it is well combined, about 2 minutes.

Step 7 –Transfer the beef mixture from the heat.

Step 8 –Arrange the tortilla chips, slightly overlapping, in a single layer at the bottom of the prepared baking dish.

Step 9 –Evenly top the chips with 1/2 of the beef mixture.

Step 10 –Sprinkle the beef mixture with 1/2 of the cheese.

Step 11 –Repeat the layers once, starting with the chips and ending with the cheese.

Step 12 –Bake the casserole until the cheese has melted and is beginning to brown on top, about 16-20 minutes.

Step 13 –Let the casserole rest for 10 minutes.

Step 14 –Serve the casserole with the chips, the lettuce, the pico de gallo, the avocado, the cilantro, the sour cream, the olives, and the hot sauce.
