Ingredients

For the cherry filling:

  • 5 cups cherries, pitted, sweet or sour
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon pure almond extract

For the topping:

  • 1 cup rolled oats
  • 1/3 cup all-purpose flour
  • 1/3 cup whole wheat flour
  • 1/2 cup brown sugar, lightly packed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter, melted
  • vanilla ice cream, whipped cream, or yogurt, optional, for serving

Directions

Step 1 –Place an oven rack in the center position.

Step 2 –Preheat the oven to 375 degrees F.

Step 3 –Lightly coat a 9×9-inch or a 7×11-inch baking dish with nonstick spray.

Step 4 –In a large bowl, gently stir the cherries, granulated sugar, cornstarch, lemon juice, vanilla, and almond extract together.

Step 5 –Pour the cherry mixture into the prepared baking dish in an even layer. Make sure you pour in any accumulated juices at the bottom of the bowl as well.

Step 6 –In a medium bowl, stir together the oats, all-purpose flour, whole wheat flour, brown sugar, cinnamon, and kosher salt.

Step 7 –Pour in the melted butter and stir until the mixture is combined and evenly moistened.

Step 8 –Sprinkle the topping mixture over the cherries in an even layer.

Step 9 –Bake until the filling is bubbly and the topping is golden, for about 30-40 minutes.

Step 10 –Let the crisp stand for 10 minutes.
